- 2 Secret Island Salmon Blackened Fillets
- 1 avocado, chopped
- 1/2 English cucumber, chopped
- 1/4 red onion, chopped
- 2 green onions, chopped
- 1 jalapeño, seeded and diced
- 2 tablespoons chopped fresh cilantro
- Kosher salt, to taste
- Olive oil
- Lime Wedges
In a small bowl, combine avocado, cucumber, red onion, green onion, jalapeno, cilantro, and salt.
In a cast iron skillet, over medium heat, cook blackened salmon fillets until slightly charred and salmon is cooked through, about 10 minutes.
In a large bowl, toss arugula with olive oil and season with salt.
Divide arugula between plates, top with blackened salmon, and an avocado cucumber salsa.
Squeeze lime juice over salsa and salmon and serve!
