- Secret Island Salmon Bacon (12 pieces)
- 12 teaspoons Dijon mustard
- 6 large King Oyster Mushrooms, trim top and bottom
- 12 teaspoons honey
- Kosher salt, to taste
- Ground black pepper, to taste
Preheat air fryer to 400.
Brush 1 teaspoon of Dijon onto each piece of salmon bacon.
Slice each trimmed king oyster mushrooms into two large medallions.
Cut crisscross diagonal lines across each round, about 1/4-inch through.
Carefully wrap each prepared salmon bacon slice around a mushroom medallion and secure with a skewer.
Brush the tops of each with 1 teaspoon of honey and season with salt and pepper.
Air fry for 10 to 12 minutes or until the mushrooms is tender and the bacon is golden and crisp.
