Ingredients

Fresh Guacamole Ingredients:

  • 2 ripe avocados
  • 1/4 teaspoon kosher salt, plus more to taste
  • 1 tablespoon fresh lime or lemon juice
  • 2 to 4 tablespoons minced red onion or thinly sliced green onion
  • 1 to 2 serrano (or jalapeño) chilis, stems and seeds removed, minced
  • 2 tablespoons cilantro (leaves and tender stems), finely chopped
  • Pinch freshly ground pepper
  • 1/2 ripe tomato, chopped (optional)

Pico de Gallo Ingredients:

  • 1-2 Tomatoes
  • 1 White onion
  • 1 Jalapeño pepper
  • 1/2 cup Cilantro
  • Lime juice of 1 lime
  • 1 tsp Cumin
  • Pinch of Salt

Simple Steps

Prepare the fresh guacamole. Slice the avocados in half, remove the pit, and scoop into a mixing bowl. Mash the avocado with a fork and make it as chunky or smooth as you’d like. Add the remaining ingredients and stir together. Give it a taste test and add a pinch more salt or lime juice if needed.

Prepare the pico de gallo. Rough chop tomatoes, onion, jalapeño pepper and cilantro. Mix together all ingredients in a small bowl with the lime juice, cumin and salt.

In a skillet over medium heat, sear salmon burgers 2-3 minutes each side or until golden brown and cooked through.

Spread guacamole on the bottom bun, add some lettuce, top with salmon burger and spoon on pico de gallo.
