- Secret Island Salmon Hot Dogs, thawed
- 8 pretzel hot dog buns
- 2 cups baby arugula
- 1 cup mayo (good quality)
- 1 TBS honey
- 2 TBS dijon mustard
- 1 TBS lemon juice
- 1/2 red onion, julienne
- 2 spicy peppers of choice, sliced thin (serrano / jalapeno / fresno)
- 1/2 cucumber, sliced thin
- 2 cups of rice wine vinegar
- 1 cup sugar
Heat vinegar and sugar in a small sauce pan until sugar has dissolved. Place onion, cucumber and peppers in one bowl / jar or three individuals in order to avoid the spicy peppers flavoring the onion and cucumbers. Pour over pickle liquid and once cool, the pickles are ready.
In a small bowl, whisk together the mayo, honey, miso, lemon juice and black pepper. Set aside in the fridge until ready.
Heat the grill or grill pan to high heat and lightly oil. Place hot dogs on the grill and grill turning for 7-8 minutes until heated through.
To plate, cut a 1/2 inch wide center out of the top of pretzel buns creating space to insert the hot dogs and fillings. Smear about 1 TBS of the honey mustard aioli onto the bun, followed by some arugula, a hot dog, a little more aioli and pickles of choice!
