Ingredients
- 4 Secret Island Salmon fillets (Atlantic or Coho)
- 2 teaspoons olive oil
- juice from 1 lime
- 1 teaspoon chili powder
- Ā¼ teaspoon cumin
- Ā½ teaspoon salt
Avocado Mango Salsa Ingredients:
- 1 avocado diced
- 1 mango peeled and diced
- 1 red bell pepper stem and seeds removed, diced
- 1 jalapeno pepper stem and seeds removed, diced
- Ā¼ cup diced red onion
- Ā¼ cup chopped cilantro
- juice from 1 lime
- Ā½ teaspoon salt
Simple Steps
In a small bowl, whisk together the olive oil, lime juice, chili powder, cumin, and salt. Brush the mixture over the salmon fillets and let marinate for 30-60 minutes.
Meanwhile, make the salsa. Combine all salsa ingredients in a bowl. Refrigerate until ready to serve.
Grease your grill grates with oil. Preheat the grill to medium-high heat. Once the grill is hot, place the salmon on the grill, skin side down. Cook for 5 minutes and then flip, cooking another 3-5 minutes, until the salmon flakes easily. Serve topped with mango avocado salsa.
